I cannot give an exact answer for other sensors. About Motor.. Please check if it works with just the motor. If It doen't work, You can find the problem verification process in answers to people's questions.

If it is 12v, NPN type, and recognized as a reflector, it can all be used.

Since the sensor you chose is larger than the one I chose, please choose the sensing location and installation location carefully.

3. There may be a problem with the motor cable. Connect a commercially available unmodified cable to see if the motor run.

would it still work if I just used a 5v 3a powersupply? and do I still need a step-down module for this?

The power supply for the sensor and motor drive shield is at least 12V. Therefore, the motor and sensor do not operate with 5V. Because of Arduino Nano, 5V power is used.

I changed to 12V 3A, everything lights up, the motor is good when I tested it individually but when I try to power everything the motor doesnt run

1. Try not to give tension in the part where you adjust the tension in the front.
2. If the belt width is 60, the belt does not turn. Because the motor torque is low. Please cut the width to 58~59 because errors may occur when cutting the belt.
You can tell by rotating the belt by hand and seeing if it touches the wall.
